Biography
Eva Papoutsi is a Faculty Member within the Usha Kundu College of Health’s, Public Health Department. She is working as a Research Associate, performing the tasks of a clinical coordinator and running cell cultures of human endothelial and skeletal muscle cells.
Mrs. Papoutsi has completed a Master’s Degree in Medical Sciences, with a specialization in Cardiovascular Disease, from the University of Nebraska – Medical Center. Her research focused on analyzing the oxidative stress, mitochondrial function, muscle morphology and quality of life of patients with Peripheral Artery Disease, before and after revascularization operation. Prior to this, she graduated with a Bachelor’s degree in Food Science and Technology, with concentrations in Quality Control, Microbiology, Biochemistry and Nutrition, from the University of Nebraska – Lincoln.
She has worked in scientific research since 2010 and has significant experience in human clinical trials, developing and running biological assays, performing cell cultures, and maintaining laboratory safety protocol and sample inventory. In addition to her research background, she previously worked as an Adjunct Professor at Baylor University, teaching Food Science to undergraduate students. She also worked as a Consultant Nutritionist for Caritas of Waco, a Social Services organization, advising clients at the Food Distribution Center, teaching Nutrition classes, and creating and demonstrating healthy recipes using the food items available in the pantry.
One of her most stand-out accomplishments was being an Honors Convocation student, graduating within the top 10% of her class, and included in both the Chancellor’s and Dean’s Academic Lists. In her free time, she enjoys music, dancing, painting, swimming, travelling and spending time with family and friends.
