4-Week Bran Muffins Categories: breads/pasta/rice 1 cup boiling water 1 cup bran 1/2 cup shortening 1 cup sugar 2 large eggs 2 1/2 cups flour 2 1/2 cups buttermilk 1 teaspoon salt 5 teaspoon baking soda 1 cup raisins 2 cups bran flakes cereal (or raisin bran) Pour water over bran and let stand Cream shortening, sugar and eggs. Blend in buttermilk. Add bran/water mixture. Sift flour, soda and salt then add to above. Add cereal and raisins. Refrigerate 12 hours. Spoon into greased muffin cups. Bake 20-25 minutes at 375°F .
