Reuben Sandwich Casserole Categories: meats/main dish 1 can (16 oz) sauerkraut; drained 1/4 cup onion; chopped 1/4 cup parsley 1 teaspoon caraway seed 2 cup (8 oz) swiss cheese; shredded 2/3 cup thousand island dressing 1/2 pound corned beef; thinly sliced, chopped 1/4 cup butter or margarine In large mixing bowl, combine drained sauerkraut, onion, parsley and caraway seed. Spoon mixture into an ungreased 8 x 8 x 2 inch baking dish and spread evenly. Layer with half the cheese, half the salad dressing and all the corned beef. Add the remaining salad dressing and top with cheese. In a large skillet, melt the butter or margarine. Add bread cubes and stir until coated. Sprinkle bread cubes over top of casserole. Bake in 375°F oven 30 minutes or until heated through and bread cubes are browned. Contributor: Kitchen Link |
