Nanaimo Bars Categories: desserts 2/3 cup butter 1 each large egg 1 teaspoon vanilla extract 1/3 cup sugar 6 tablespoon cocoa 1 3/4 cup graham cracker crumbs 1 cup coconut 1/2 cup walnuts; chopped 1/4 cup butter 2 tablespoon vanilla pudding mix (cook n serve) 1/4 cup milk 2 cup confectioner's sugar 1 teaspoon peppermint extract 4 drops green food coloring 3 oz semi-sweet chocolate chips 1 tablespoon butter Bottom Layer: Melt butter, set aside to cool. Add egg and vanilla to melted butter and stir to blend. Combine sugar, cocoa, crumbs, coconut and walnuts in a medium bowl. Add butter mixture and stir until well blended. Press mixture into a 9 x 13 ungreased pan. Chill. Middle Layer: Cream butter. Dissolve pudding in milk, add to creamed butter and beat. With mixer running, gradually add sugar and beat until sugar is combined and mixture is creamy. Add peppermint extract and food coloring and mix again. Spread evenly over chilled bottom layer and chill again. Icing: In top of double boiler (do NOT use microwave), melt icing ingredients and stir to combine. Cool slightly. Pour icing over chilled layers and spread evenly. Chill. Store in refrigerator. When ready to serve, cut into squares. Contributor: Nana |
